Fresh fruit, vegetable program expands for Ill. schools

(KFVS) - The Illinois State Board of Education announced Monday that 267 schools in Illinois will participate in the Fresh Fruit and Vegetable Program during the 2012-13  school year.

The schools, both public and private that already participate in the National School Lunch Program, will get a total of $4.9 million to share, up from last year’s grant amount of $4.7 million that served 215 schools.

“This is a valuable federal program that improves access to great fruits and vegetables,” said Illinois State Board of Education Chairman Gery J. Chico. “This program helps children from low-income families feed their minds and bodies with good nutrition and promotes healthy habits for life.”

The Fresh Fruit and Vegetable Program requires participating schools to use between $50 to $75 per enrolled student, with the majority of that money being spent on fresh produce. Program funding runs through June 30, 2013.

INA, IL (KFVS) - Rend Lake College is offering food sanitation and sanitation refresher courses.

Restaurant workers, school cooks, those who sell food at farmer’s markets and bake sales, and others can become certified in food sanitation, and those whose licenses need renewal can do so through the refresher course.

In Food Sanitation (CULA 1205), students will learn to identify the causes of food-borne illness, identify and apply correct procedures for cleaning and sanitizing, recognize problems and potential solutions associated with facility, equipment and layout, and understand the Illinois code related to food service establishments. Successful completion of this course prepares students to take the State of Illinois exam for Management and Sanitation Training. Students must bring a photo identification to class.

Trust donation strengthens scholarship for future RLC students

Trust donation strengthens scholarship for future RLC students

INA, IL (KFVS) - Rend Lake College says the Diamun Family Trust has straightened the Mundell Memorial Scholarship for future RLC students.

In 2003, the RLC Foundation learned it was the benefactor of $14,157 from the Diamun Family Trust. The money was to establish the Mundell scholarship endowment for BCHS graduates. The Foundation invested the money and, with the earnings, has awarded the Tommy Mundell Memorial Scholarship to a deserving Benton graduate every year since.

Nine years and nine scholarship recipients later, RLCF CEO Shawna Hall received a visit from the executor of the trust. Curtis Mundell had passed away. The Diamun Family Trust terms were now complete. Three educational institutions – RLC, Southern Illinois University Carbondale and a university out west – received an additional $39,463.
